A powdered spice to use for making blackened steak or chicken.
|1||cup||Red pepper powder (cayenne or a mix)|
|1||cup||White pepper powder|
|0.25||cup||Gumbo File powder (optional)|
|0.25||cup||Rosemary (fine powder)|
|0.25||cup||Sage (fine powder)|
Mix all the ingredients well. Keep in a jar until used. Salt may cause clumping in damper climates.
I have used "cup" as the unit, but you can substitute any other unit to suit how much you want to make at once. For things like blackened steak, you will use it like flour for coating so make enough.
If you want to salt the meat separately, leave out the salt.
